Chapin-a founding father of Fargo and a master hotelier renowned for his signature red bowtie-we are dedicated to providing our guests classic comfort, service, and conviviality. Located inside the hotel is Rosewild. Rosewild proudly serves Dakota-inspired Nordic cuisine. We are dedicated to using local ingredients and working collaboratively with regional farmers, ranchers, and purveyors. Our seasonal menu is shaped by rural Nordic cooking techniques-foraging, butchery, fermentation and curing. Hearty vegetables and shareable fish and meat courses are brought to life on our open, wood-buring hearth. Each dish is designed to pair with classic cocktails, local beers, and friendly wines. It is our passion and privilege to honor Fargo's Nordic heritage by delivering sensibly elevated upper-Midwest cuisine.
